I’m not a regular baker, but when I do, I rarely have any success (I’m going to blame my oven…). So, when I found this no bake recipe in the Good Housekeeping Super Student Grub cook book, I knew I was on to a winner.
- 225g butter, and a little extra to grease your tray
- 3 tablespoons golden syrup
- 50g cocoa
- 300g digestives, crushed
- 400g plain chocolate, broken into pieces
So, start by melting the butter, golden syrup and cocoa all together. You can do this by putting the ingredients in a bowl over hot water, or cheat like I did and use the microwave! Make sure you keep stopping and stirring everything together.
Next, pour that gloopy, chocolate mixture over your crushed digestives! Make sure every crumb is coated, and the mixture is spread pretty evenly. At this stage, you’re going to have to try really hard not to just stop and eat what you’ve made so far- good luck!
Put the chocolatey digestives in a greased tray. Get everything in the tray, as tightly packed as possible to create a strong base. Put the tray in the fridge for about 20 minutes.
Once your cooling time is up, melt the broken, dark chocolate. Again, you could do this over a bowl of hot water or in the microwave. Once the chocolate is melted, pour it over the biscuit base, evenly. I used a spoon to spread the chocolate and create a little swirly pattern.
Put the tray back in the fridge. If you’re in a rush, it should only need another 20 minutes or so, but I left it over night. The most difficult stage, I think, is cutting the slices up. Solid chocolate is tough and cracks, so prepare to get a little bit messy and accept that none of the slices will be perfect!
